Ginger, Zingiber officinale, is a tropical plant valued for its aromatic rhizome. Although it is commonly referred to as "ginger root", the part used is the underground stem. The spice has a long history in Asian cuisines and in trade between regions. Over time, it also became present in European baked goods and drinks.
A rhizome used in many forms
The part of ginger known from cooking is the rhizome, i.e. a transformed underground shoot. Fresh raw material, dried powder and extract differ in preparation and profile. Processing can affect the proportions of characteristic compounds, so a common name does not imply full interchangeability. For the extraction material, the name Zingiber officinale, the indication of the rhizome and the parameters of the extract are useful. The aroma of a dish is not a way to estimate the amount of ingredients in a capsule.
Meaning and application
Fresh, dried and heated ginger differ in their aroma profile and characteristic compounds. These include gingerols and shogaols. Therefore, the extract is not simply the same portion of spice enclosed in a capsule. In recipes, the method of preparation and possible standardization are important. Ginger is valued culinary for its simultaneous impression of freshness, aromaticity and spiciness. These characteristics of the raw material should be distinguished from the declared properties of a specific finished product.
In practice
Fresh rhizome, dried and further processed material may differ in the profile of characteristic compounds. This is one of the reasons why knowing the aroma of a spice is not enough to evaluate a concentrated extract. Gingerols and shogaols are names of different ingredients, not synonyms for the entire extract. If the manufacturer provides standardization, it is worth reading its scope and quantitative basis. Do not compare the weight of powder with the amount of a specific compound as if they were the same value. The historical presence of ginger in dishes helps describe its origins, but the exact form of the raw material, portion and label inform about the modern recipe.
