Oat, Avena sativa, is a cereal with paniculate inflorescences and a long history of cultivation in the temperate zone. It thrives in colder climates, which is why it has become a strong part of northern European cuisine. Cereals, groats and flour are the most famous uses of its grain. This raw material was also used in cosmetics and plant preparations.

Grain, bran and green parts

In oat processing, fractions are separated from which various food and cosmetic products are made. Bran is not the name of the whole grain, and the extract from the aerial parts is not oat flour. It is worth keeping this distinction also in the descriptions of supplements. The name Avena sativa identifies the species, and only the indication of the plant part and form tells us what material was used in a specific recipe.

Meaning and application

However, the common name "oats" may cover various materials: grain, bran, young above-ground parts or extracts. They are not interchangeable in terms of composition. Beta-glucans associated with cereals do not describe all the properties of each oat extract. Interestingly, there are varieties that differ in grain color, including dark ones. The term "black oats" therefore requires reading the specifications, and not assigning any characteristics to the entire species.

In practice

Grain material has different characteristics than the green above-ground parts of the plant. Bran, flour and extract are also separate forms, so their names should not be interchanged when comparing recipes. The recognition of oatmeal does not mean that every extract contains the same set of compounds as a portion of breakfast. The term beta-glucan refers to a specific group of ingredients and requires a separate declaration if it is to be used for quantitative comparison. It is also worth distinguishing the color of the variety from the parameters of the material. The black color of the grain does not in itself explain the composition of the extract. The most important thing is the exact name of the raw material, the part used and a description of the preparation process, not a single culinary association.
